I don't know about you, but I love tater. I mean still, but most of the time they are made with gluten, so they can't go for me. I decided to make my own version of a tater that uses sweet potatoes instead of white potatoes (= more nutrition!) And we roast them instead of frying.
Results? Healthy sweet potato and veggie tots that bite a little!
How to Grate Sweet Potatoes The Easy Way
The first part of making a healthy tater is your potato. We use sweet potatoes and I like to use gems or sweet potatoes. You can also really use Japanese white yams if you want them to look more "traditional"!
This recipe requires three cups of grated sweet potato. The easiest way that I found to bake sweet potatoes is to use my food processor. I mean you can use a standard box grater, but this method requires less time and your arms won't get tired ????
All you need to do is peel the sweet potatoes first. Just cut it into a spear shape (about 1 inch - 2 wide) then attach your food processor to the grid. Start the engine and push the spear up. In about 30 seconds, all your sweet potatoes will be completely grated!

We will bake our tater tots, which means we need the dough to really blend. The first thing we need to do is steam our sweet potatoes. You can add it directly to the dry pan, add splash water, and cook for 3 minutes. It should be soft and soft when you test it.
From there, add to the bowl and add flax eggs (which is our binder), some nutritional yeast that adds the cheese flavor AND some vegetable protein, as well as some quinoa flour, spices, and the final ingredient ... hummus.
I know this sounds like a weird combo, but it really works. The dough should be rather sticky and you should be able to easily form it into a better shape.

INGREDIENTS
- 3 glasses of grated + chopped potatoes
- 2 flax eggs (2 tablespoons of flaxseed + 6 tablespoons of water)
- 1/2 cup nutritional yeast
- 2 tablespoons of quinoa flour
- 1 teaspoon of garlic powder
- 1/2 teaspoon of smoked paprika
- 1-2 tablespoons of hummus
- 1/2 teaspoon salt + pepper
INSTRUCTIONS
- Grate two large sweet potatoes using a box grater or food processor. After shredding, measure three cups and give them a quick slice. Add yams to the pan and steam for 4 - 5 minutes until tender.
- While steaming sweet potatoes, stir with flaxseed and water, then set aside.
- Allow the sweet potatoes to cool for 5 - 10 and transfer to a large bowl. Add the remaining ingredients, including flax eggs, starting with only 1 tablespoon of hummus. Stir together until it forms a dough. If the mixture is rather dry, add another tablespoon of hummus.
- Cover the baking sheet with baking paper and form the dough into balls or small tots. Refrigerate for at least 30 minutes.
- When ready to bake, preheat the oven to 400ºF. Bake for 20-25 minutes, turning over halfway.
